The Winery at Wolf Creek in Norton, Ohio

Taking the last sip of my wine sample of Space Cowboy, I noticed a group of bubbly young college students walking through the door of The Winery at Wolf Creek, dressed for a bachelorette party. They approached the tasting bar where I was enjoying a glass of wine when we struck up a conversation.  It was their first time here, so they asked what I was drinking and if I had any suggestions for what they should order.

This was their first winery experience but they were not new to wine. We discussed which types of wine they would normally purchase and I shared with them my wine list with all of my hand written notes.   I suggested that they start out sampling some of the wines before they commit to a bottle.  They agreed that the sweet, fruit wines were more their style so they started out with samples of Blue (blueberry), Original Sin (apple) and Space Cowboy (peach).

The server set them up as I took a glass of Redemption out to the patio, waiting for a pizza from Fat Boys.  Redemption is a French-hybrid blend that is light on the sweet side which I absolutely enjoy chilled.

I took a menu outside to look over the beer selection that includes craft beers from local and popular breweries as well as ciders and fruit based ales.  The Winery at Wolf Creek has a limited menu of cheeses, meat and crackers but they welcome patrons to bring their own foods to enjoy with their wines while enjoying the spectacular view.

With a few minutes to spare, I reviewed my tasting notes and information that I had collected from my server.  Distracted by the beautiful view of the Akron skyline, I noted which wines I would be purchasing before leaving the winery.

The Vignoles was my first sample which is a semi-sweet estate wine that I found had a lingering sour finish.  This having been my first experience with this wine, I was curious to learn about specific food pairings that may alter the taste of the wine and found an unusual list to include pumpkin and ginger-based foods as well as gingers snaps*.

One of the varietals grown on the estate, Vignoles is one of three grapes that make up about 80 percent of their white wine production which also includes the Pinot Gris and Leon Millot.

Peppery and smooth, the Zinfandel was my absolute favorite but having learned that the winery makes a great Cabernet Franc, I had to sample this wine as well.

Summit County provides a grape growing terrior that includes sandy loam, clay loam and gravel.  Because the climate is similar to the Loire Valley in France, this provides the potential as a perfect location for growing Cabernet Franc and Chambourcin varietals.

Switching over to sweet wines, Sweet Revenge is a beautiful Ohio rose that the winery has been making for over twenty years.  A blend of Seyval Blanc and French Hybrid wines, this crisp, delicious wine is a classic.

I am always interested in sampling the fruit wines from Ohio wineries because they have the potential to be extremely fruity or combined with grapes, have subtle notes of fruit flavor in the blend.  Blue, a semi-dry blueberry wine was rich in color as well as a little tart which I found to be an absolute lovely combination.

Original sin is the perfect name for this crisp, apple based wine, but it is Space Cowboy that wins my vote with its full peach flavor in every sip.

The sun is starting to set on this beautiful, brisk October evening. I bring myself inside where I can continue admiring the outside view from the beautiful glass windows of the tasting room.

My pizza had just arrived, so I ordered a bottle of Zinfandel, knowing that the winery can repackage the remaining wine for me to take home.

The Winery at Wolf Creek is open year around, with limited hours during the winter season.  Cellar tours are available by appointment and wine tastings are offered daily.  The winery offers a great selection of wine accessories, clothes, gift baskets and of course, wine which ranges from $14 to $24 per bottle.

The bachelorette party is going strong in the tasting room and I stop by to inquire how they enjoyed the wines.  The bride-to-be, dressed in red, mentioned that they had such a difficult selecting a favorite that they purchased one of each to enjoy with their large group.  I told her to beware of the Big Bad Wolf as I exited the winery, happy to see they were having the time of their lives.

Former Church is now the Home of Father John’s Brewery

On this beautiful Sunday afternoon, my sinful urge to have a beer led me to Father John’s Brewery, the former Methodist church in Bryan, Ohio.  Originally built in 1867, this wooden church was later renovated in 1895 with a red-brick exterior, beautiful stained glass windows and the addition of a pipe organ, custom built.

Instead of waiting for a table, I grabbed a chair at the cross shaped bar and placed an order for a flight of brews.

A self-proclaimed novice to local craft beer, I tend to lean towards the light beers or ones that offer hints of fruit flavors.

My beer selections for my flight of 6 include:

  • The Venerable Bede IPA 1% – love this one
  • Sacrificial Goat Amber 66% – just a slight  nutty taste
  • Proverbial Porter 1% – grows on you; wasn’t my favorite at first
  • Michael’s Pale Ale 6.3%  a fellow bought the very first pint and they named this beer after him
  • Fresh off the Bine Fresh op Beer 5.3% – can taste the wheat
  • The Imp Imperial Rye 8,4%
  • Ranger IPA 6.5% – love this one

Enjoying my selection of craft brews, I grabbed a couple of my samples so I could walk around and browse the amazing set up.  I felt as though I was standing in the middle of a Renaissance castle with life-size armor, period furniture and Medieval embellishments.

Father John’s Brewing Company opened in 2012 to produce ales and lagers in addition to wine and meads.  With a brew-on-site operation, Father John’s includes eighteen draft beers.

While indoors you may notice the dark, mysterious interior, a walk outside will have you feeling as though you have taken a seat among the French countryside.

The owners of Father John’s want visitors to consider their brewery as a place to discover.  One way is to roam both the beautiful exterior as well as the fascinating interior.  During my exploration, I learned that there is a crypt within the grounds of the church.  The space below the ground has been covered with a clear glass as it is thought to be containing remains, but out of respect it has been undisturbed.

Did you know that the first gluten-free craft beer made in Ohio came from Father John’s?  They appropriately named it Intolerant Ale.

Exiting the brewery, I found the beautiful garden with fire pits, flowers and tables to enjoy the outdoors.  What a change from the dilapidated structure that had lay empty over a period of time leaving the slate roof falling in and its foundation crumbling.   Saving the building, Dr. John Trippy opened the space as a brewery/restaurant in 2012.  Shortly thereafter, the Stoned Goat Inn was opened for visitors needing an overnight stay.

There is an incredible serenity at Father John’s.  Visitors are welcome to take a tour of the brewery, experience a wine tasting, book a private gathering or even a night at the inn for an immersive experience.

Cruise Ship Shore Excursion in St. Lucia, The Scenic Drive, Part 1

In the harbor,  the cruise ship was tucked into a little cove at Pointe Seraphine.  We had just arrived in St. Lucia where we were surrounded by sailboats and speed boats.  Wanting to see as much of the island as possible, I signed up for a ship’s excursion which included a tour of the island by bus and then a return trip back to the ship by Catamaran.  I couldn’t wait to start my day.

I boarded the bus and the journey began in Castries, the island’s capital.  The bus was full of passenger as we passed Derek Walcott Square.  Our driver explained that we were in the center of town and he pointed out a large samaan tree which is said to be over 400 years old.

As the road continued upwards, there were twists and turns where we caught glimpses of the cruise ship through the trees.   Heading south, we passed The 1895 Government House, home to the Governor-General of St. Lucia.

On the winding road towards Soufriere, the bus took a moment for us to stop at Marigot Bay, one of the most beautiful views of the island.  There was a lookout with a small shop where we could pick up some water, local food items or a Piton beer made in St. Lucia.  We had some time to shop and then reboarded the bus to our next scenic view.

The road descended from the picturesque views of Marigot Bay to the volcanic shores of a local  fishing village.  Stopping for an opportunity to shop and wander the streets of the town, we decided to venture out onto the pier for a short stroll.

Once a week, the town hosts a fish fry for locals and visitors but it is their celebration of Carnivale for which they are best known.  Similar to Mardi Gras in New Orleans, visitors from the surrounding islands arrive in flamboyant costumes and dance in the streets for a week-long party.    There are several murals painted on the walls that show elements of the festivities.

According to our tour guide, we had one last stop to take in the million dollar view of the Pitons and to shop for souvenirs.  The two peaks, majestically rising out from the ocean, seem to protect the charming little port town below.   Our next stop takes us to the Diamond Botanical Garden before boarding the catamaran back to the ship.

Reserving a two bedroom villa, I did not want to leave my private pool, but the grounds and accommodations at Windjammer Landing were absolutely gorgeous.

Embers at Windjammer Landing was my favorite place to dine for lunch.  The pulled pork flatbread was perfectly spiced with jalapeno peppers and pepper jack cheese.  I also enjoyed the Ember’s Fish Tacos, with garlic aioli and pineapple salsa.

For an incredible steak and seafood dinner, I highly recommend the local conch chowder and the grilled filet mignon at the Upper Deck Restaurant at the resort.

For a more casual atmosphere and menu, offering salads, soups and burgers, Jammer’s beachside restaurant is the perfect spot for a quick, delicious bite.

To sample some of the local island cuisine, I suggest the Tuesday night Caribbean buffet at Dragonfly which offers  a wide selection island flavors from St. Lucian soups to their national dish Green Fig and Salt Fish.

  • Bouyon – beef soup with dumplings but other meats can substitute for beef
  • Callaloo soup – made with seafood or cuts of meat, okra, potatoes and garlic

  • Curried Meats
  • Fried Plantains
  • Green figs and saltfish
  • Grilled Fish
  • Lambi – conch meat seasoned with multiple spices and then fried
  • Lobster
  • Pemme – cornmeal, pumpkin, cinnamon, sugar and dry coconut leaves then wrapped in banana leaves
  • Pepperpot  – Caribbean dish made from onion, garlic, cinnamon, brown sugar, thyme, cloves, orange peel, cassareep and meat
  • Smoked herring and breadfruit – breadfruit is cooked until tender

Jungle Jim’s International Market, Fairfield, Ohio

To describe Jungle Jim’s as an “International Food Lovers’ Paradise!” is more than accurate and may quite well be understated.

The parking lot was packed as I arrived at the supermarket’s flagship location in Fairfield, Ohio.  Not quite sure what to expect, I was happy to have picked up a map because this place is ginormous.  With my shopping cart, I began my trek through over 150,000 worldwide product and was happy to try some samples as well.  I could have easily spent hours browsing the aisles, sorting through all of the fabulous merchandise and produce.

Greeted by a talking corn stalk, I would soon learn that the entertaining displays are as much a part of the experience of Jungle Jim’s as exploring the superstore and its endless grocery items.

Bearing towards the right,  I passed the pharmacy and American grocery aisles.  I soon arrived at the delicatessen where I found several stands displaying a wide variety of snacks.  Attendants were distributing samples of organic crackers topped with brie cheese and fig jam. I found myself adding these items to my cart for my next get-together with friends.

I selected a few dairy products from Greece and Italy to create a charcuterie board to enjoy later that afternoon.   I also selected a variety of cheeses from England, Ireland and Australia.

What’s a charcuterie board without wine?  The wine and beer “wing” of the market is stocked with spirits from all over the world that at first glance, I was a bit overwhelmed.  The wine representatives at Jungle Jim’s are more than helpful to help visitors find the best wines in their price range based on the wine that interest them.

Nearby was a liquor store, a humidor and a tasting bar.  There is not much that Jungle Jim’s does not offer and who wouldn’t mind a glass of wine while shopping for groceries?

This is not just the average grocery store wine selection.  There are aisles and aisles of wines from Argentina to South Africa, clearly marked by country.

One of my favorite areas of wine to explore is the local vintages where I stocked up on a few bottles from my favorite Ohio wineries.

The beer selection is just as impressive.  I had a great time shopping for a few international beers to enjoy throughout the week.  Each aisle is clearly marked by country and local beers making it easy for me to find the brands I wanted to sample.

Jungle Jim’s also has a tasting room where visitors can sample a pre-selected list of wines and beers for a minimal charge.  I ordered a couple of samples and then a glass of wine, that I could drink as I continued shopping.

I passed the beer cave and restrooms heading away from the beer and wine until I arrived at the bakery.  With so many selections, I decided to pick up some cannolis and macaroons.

The desserts seemed to continue on into eternity.  In addition to Jungle Jim-made sweets, there are local selections from some of the best bakeries in Cincinnati.

The meat counter offers fresh cuts of meat or packaged items that include some exotic cuts of beef.  One of my favorite areas of the market is the International produce where fruits and vegetables are imported from all over the world.

To the left of the International Produce section which includes such items as bok choy, chili peppers, yucca, etc., there are several rows of freezers and shelving units that display Asian foods and spices.

From Japanese to Balinese, Chinese to Taiwanese, there is no shortage of cooking items for making some of the best Asian dishes.

I couldn’t wait to explore the seafood area.  Jungle Jim’s is one of the rare markets that carries sushi-grade tuna.  I was also able to find lobster, oysters as well as a selection of local fish.

Once I had taken in the smells of the seafood and said goodbye to the lobster, I arrived at a large fire truck  showcasing a never ending supply of hot sauce.

Germany is to my right and further down the aisle is a great selection of cookware and gadgets.  From here, I could see Sherwood Forest representing the foods of Great Britain.  I picked up some Twinings Tea and proceeded past the Hispanic section towards the aisles of Italy.

In the market for a couple of great pasta sauces, the Jungle Jim’s representative suggested a local option, so I grabbed one off of the shelf and began making my way towards the check out line.

Within minutes I was home and ready to open one of my bottles of wine after a long day of shopping.  I had such an amazing experience at Jungle Jim’s and couldn’t wait to make a few new dishes from the ingredients I had just purchased.  Removing a pad and pen from the kitchen drawer, I began a new list of items to purchase for another visit I planned for the next weekend.

Jungle Jim’s International Market first opened its doors as a permanent fruit and vegetable market in 1975.  From its humble beginnings in a 4,200 square foot complex to a 6-acre megastore, Jungle Jim’s also provides a variety of additional services to its customers including banking, pharmacy, post office, jewelers, hair dressers and restaurants to name a few.

The Bento Boxes for lunch are the best deal priced at only $10.95 served with salad, spring roll, crab rangoon, fruit, and lo mein noodles or rice. So far, I have tried Box Number 3 (spicy tuna roll and 3 pieces of a California roll), Box Number 4 (Shrimp Tempura roll and 3 pieces of a California Roll), and Box Number 15 (Grilled 4 chicken satay). They are made fresh and extremely filling.

More of My Favorite Places to Eat: 

  • Skyline Chili:  My go-to meal at Skyline is the 4-way chili with onion served with oyster crackers and hot sauce.  I always pick up two York peppermint patties after cashing out.  Cincinnati chili is a beef based sauce served over spaghetti noodles and cheese.  Additional toppings include onions and beans.
  • LaRosa’s Pizza:  A local chain pizzeria, this Sicilian style pie is made with a sweet crust and sauce.  My favorite menu item is the Caprese pesto Flatbread Pizza.
  • Graeter’s Ice Cream:  It’s the French Pot process that makes Graeter’s Ice Cream so decadent and rich.  Towards the end of the process, they pour chocolate into the mix creating large chunks of yummy goodness.
  • Montgomery Inn BBQ:  Visiting the original Montgomery Inn BBQ at the boathouse is a culinary and scenic experience.  Their ribs are served with a sweet and tangy sauce that has since made them the “Ribs King” and a favorite among locals.  Load up on their amazing BBQ flavored Saratoga chips,
  • Glier’s Goetta:  While it looks like a slab of corn beef hash, this breakfast staple is made of sausage and oats, cooked until crispy.  Most breakfast restaurants carry it as a side, especially the local cafes and diners.
  • BonBonerie:  One of the most decadent pastry shops in Cincinnati, their rich confections are absolutely amazing.

  • The John A Roebling Suspension Bridge
    • Pick a spot near the Covington pier and shoot north toward the Cincinnati skyline.  Shoot at sunset and underexpose by a few stops to get the lights just right.
    • The new lights on the bridge create excellent stars when you photograph them using a narrow aperture (~f/16 and above) on your camera. That means you’ll need a longer exposure (and thus a tripod).

    • Shoot from the top of the flag pole mound to get more building reflections in your shot. Shoot at sunset or sunrise for great lighting.

    • Provides some neat photos of the highways snaking around the city. Set your camera on a tripod and use a long exposure to get moving car trails. It’s only open at sunset a few days each year.

    • One of the most beautiful historic firehouses in all of Cincinnati. The firefighters here are used to having their photo taken while they work. Ask nicely and you can get some cool shots.
  • Cincinnati Observatory Center

  • Great American Ball Park
    • Shoot the front of the stadium around sunset to get a nice color blue in the sky. Get one of the player statues in your shot for extra effect.
  • Devou Park
    • The overlook next to the Drees pavilion affords a great view of the Cincinnati skyline. Shoot at sunrise or sunset for the best lighting. Underexpose slightly to get the city lights just right.
  • Newport Central Catholic for fireworks
    • Shoot the Riverfest fireworks from this location. Bring a long lens and a tripod. You’ll want a long-ish exposure (5-10 seconds) to capture the bursts, but make sure the skyline isn’t overexposed.
  • Riverfront Park
    • The colorful fountains make a great subject, but you need to use a relatively fast shutter speed (>1/20 or so) to catch the lights before they change color, leaving your pic with plain white lights.
  • American Sign Museum
    • Be sure to bring a tripod to capture all the signs. Manual white balance is the way to go, because there are so many crazy colors of lights that your camera won’t know how to react.

Explore Medieval Life at the Ohio Renaissance Festival

Stepping into another place and time, I entered the charming medieval village of the Ohio Renaissance Festival in Harveysburg, Ohio.  This festival was voted one of the best in nearby Warren County, and I imagined a day of eating overesized turkey legs and drinking lots of beer.  What could be better than that?   So, on a beautiful, sunny Saturday afternoon, I set out to enjoy a day in the Middle Ages.

The Ohio Renaissance Festival takes place yearly on the weekends running from late-August to October.  Dating back to 1990, the venue eventually established a permanent location in Harveysburg and began building a medieval village.

What I found most fascinating about the festival was the number of people in costume.  From wenches to rowdy pirates, lords and ladies, it was as though I had been transported to England in the 16th century.  I was also surprised at the size of the venue which sits on about 30 acres displaying over 100 shops in the Medieval Marketplace and a large number of outdoor stages for entertainment.

As I wandered through the village, the smell of barbecue drew me to the food stalls where I started my feeding frenzy with, of course, that turkey leg and a beer. It was a difficult choice because there were so many options such as bread bowls filled with soup, fish ‘n chips and corn on the cob.

I could hear cheering from the jousting field and began to wander towards the Tournament Joust.  The royal family was joined by their friends and watched the competition from their box seats.  The excitement of the crowd was contagious, so I joined in to cheer on my favorite knight, jousting to the bitter end.

The shops were filled with medieval merchandise, including gorgeous gowns and armor.  Made-to-order crafts were available for purchase and I enjoyed browsing through the leather goods, stone carvings and jewelry.  High end, more expensive items were those made from glass and novelty items such as dragon eggs.

In addition to the shows and entertainment, children and adults played games, competed in feats of skill and enjoyed carnival-like rides.  It was an opportunity for me to try my hand at archery, knife and ax throwing, a few tries to “drench a wench”, and a ride on the swinging ship called SeaDragon.

The admission covered most of the activities at the festival.  Additional attractions not covered included the Premium Jousting Seating (the Royalty Box), Open House Mead Tasting and the Naughty Bawdy Pub Show and required a small fee.

I spent most of the day at the Festival and found myself browsing the shops, trying a few games and watching some of the shows.  I joined in with the singing at the bar and was living the life of a serf.  I was amazed at the amount of fun I was having and loved the camaraderie of the crowd.

What was even more amazing was how much time and effort that goes in to setting up the Renaissance Festival each year.  The authenticity of the venue was so outstanding that I felt I was actually visiting a medieval village, immersed in the experience.

Our Port Day in Puerto Vallarta

It was our final day cruising along the Mexican Riviera as the Carnival Splendor brought us into the port of Puerto Vallarta.  This cruise ship stop on the Pacific Coast rests on the edge of Banderas Bay, protected by the tropical forests of the Sierra Madre Mountains.  My friend Dani and I were so excited for this day because we had booked the dolphin excursion from the ship.  We would have plenty of time after our tour to explore this popular port town and enjoy an authentic meal of tacos, nachos and quesadillas.

As soon as we disembarked the ship, we boarded the ferry that shipped us off to the Dolphin Rescue and Reserve.  It was a short ride but the scenery was beautiful as we took in the bay and watched the ship fade into the distance.  Our group size totaled twenty, which included not only adults but several children.  The kids were so happy to see the dolphins and their energy made us just as excited as well.

Once we arrived, we followed a path through dense brush where our tour guide pointed out several native birds.  The iguanas were difficult to find, camouflaged against the green foliage so we were thrilled to point them out to our fellow travelers the moment we spotted them.

It wasn’t long until we had arrived at the pool and distracted by wanting a glimpse of the dolphins, we strayed away for a minute or two in hopes of seeing these amazing creatures.   The research team led us to a covered space providing us with a safety briefing as well as instructions on how to interact with the dolphins.

We were asked to remove our jewelry so that we did not scratch the dolphins’ delicate skin.  It was also important that we allowed the dolphins to take their time to get comfortable with us once we entered the pool.  The trainers would be looking for any signs of distress by the dolphin(s) and our interaction could cease at any time should the caretakers feel the dolphins were not comfortable.  Cameras were not allowed in the pool area, but we could purchase our photos from the reserve.

Prior to hearing the rules, Dani and I happened to take a photo of the dolphins as they were let out during our educational session.  I was happy that they allowed us to keep the photos, but of course, reminded us not to take any additional photographs.

Once we finished our dolphin swim, we followed our guide to an observational deck below where we could catch a better glimpse of the dolphins underwater.  A highlight of my trip was to watch a seven month calf swimming side by side with her mother.

I would have loved to have had more time watching the dolphins, but our group was preparing to leave as another tour began.  Dani and I had decided to stop by a local restaurant to enjoy a couple of margaritas before boarding the ship.

We selected a cozy, open-air café where we could people watch and place an order for an authentic Mexican meal.

We started by requesting a Pacifico, the local beer.

After finishing our snacks, we decided to return to the ship a little early and hang out by the pool.  The excitement of swimming with dolphins lasted throughout the evening and I wished I would have purchased the photo.  Removing “Swimming with Dolphins” from my bucket list, I was ready to relax for the rest of the evening.

What to Eat:

  • Birria is made of goat or lamb boiled in local spices and prepared spice. It is served with lime, onion and tortillas.
  • Fish roasted on a stick or “pescado embarazado”
  • Tamales are corn meal stuffed with meat, tomatoes, chilis, while some have pineapple without chiles. The corn meal is then wrapped by a corn husk and steamed.  A favorite during the Christmas holiday.
  • Tequila, mescal and raicilla are alcoholic drinks. While most are familiar with the tequila and mescal (with the worm), raicilla is much stronger and has a smoky taste.

A Cruise Ship Drydocks in Galveston

Have you ever wondered what happens to a cruise ship when it needs major maintenance or a much-needed remodeling?   While working for the cruise lines, our ship’s Chief Purser explained that I would be traveling with the ship to Galveston, Texas for dry dock after returning from vacation.  Over the next few weeks, the ship would undergo updates in the engine room, new carpet throughout and the installation of updated technology.  Our ship left Tampa en route to Texas and we arrived at Todd Shipyards in less than six hours.  I stood on the bridge as the captain entered the designated slip where the Vera Cruz would be dry-docked and met the local ship’s agent for instructions.  Of course there were no passengers during this time, but a skeleton crew was required to carry out a number of shipboard activities, including customs and immigration.

Once the ship entered the slip and was securely tied, the water was drained from the basin, leaving the bottom of the ship exposed.  I  finally saw the ship’s hull from beneath the waterline, which ended my curiosity as to how far the ship extended below the water.

Additional bodywork was scheduled for the exterior of the ship to include the removal of barnacles and the repainting of the hull.  During the drydock period, the water was shut off and electricity was only supplied to designated areas.  The schedule to finalize the updates and maintenance was tight with not much margin for error.

I remember the first time I approached the gangway while in dry dock.  It was the first time I realized I had a small fear of heights. The narrow bridge that connected the dock to the ship was much longer than what passengers experienced in port.  Concrete replaced the usual water, so it made me weak in the knees when I looked down.  The drop seemed so far that I held on for dear life to the railing and slowly walked toward the entrance.

During my experience in dry dock, many of the deck hands and ship’s officers provided oversight for the changes scheduled for the Vera Cruz.  They worked long hours to ensure that the dry dock activities ran smoothly and that the ship would return to its regular sailing schedule.

Because of the limited electrical and water resources, the working crew and officers stayed at a local hotel so we could sleep comfortably at night and make it to work on time each day.  Although ship life is hard work at times, our dry dock schedule was like working a REAL job….or at least we were able to experience what it was like to work “on land” for a few weeks putting in only eight hours a day.  And while spending time on the ship during dry dock was an interesting experience, I was more than happy to return to sea.

For a small bite to eat, I ordered the Crab Finger Trio: sauteed crab finger santorini, fried crab fingers and crab au gratin.  Served with rice and vegetables.   Delicious!

A great restaurant for cajun dishes, especially the local crawfish.

What to Eat:

  • Crawfish:  Crawfish season in Texas runs from January to July.  While the most popular way to eat this local seafood is in a crawfish boil, other options include etoufee and fried tails.
  • Texas BBQ:  One of my favorite meals when I visit Texas, I can’t get enough of beef brisket slowly cooked in a BBQ pit.  A tomato based sauce seasoned with spices, onions, and garlic, the amazing flavors bring out the smoky taste of the beef.
  • Tex-Mex cuisine:  In addition to nachos, guacamole, burritos and tacos, there are several dishes that have evolved from the traditional Mexican offerings, such as:
    • King Ranch Chicken:  a dish made of shredded chicken, canned diced tomatoes and green chiles, cream of mushroom soup and cream of chicken soup, diced bell peppers and onion.
    • Pan de campo is the official state bread of Texas which a type of flatbread used as the base for a variety  of breakfast meals and meats often served with refried beans and rice.
    • Frito Pie:  With Fritos as its base, seasoned beef or chili, cheese and onion are piled on one another to make a hearty meal.  Some people like to include salsa, sour cream and jalapenos for additional heat and flavor.
